George Hunter, one of SA’s top barmen and chief curator of cocktails and spirits at Marble and Saint restaurants, has put his hat in the ring to win the global BACARDÍ® Legacy cocktail competition. George has created “The Cazador”. It’s a historic combination of Bacardi Ocho, lime juice, maple syrup, Crème de Cassis and Absinthe.
“The name of the drink is my surname, ‘Hunter’ in Spanish,” George explains. “The idea is to leave a legacy and just as the man who invented Bacardi did, I thought putting my name to it was a great start.”
“I’ve always been inspired by classic cocktails – I love their elegance and simplicity,” says George. “For this competition, I wanted to create a drink that people could recreate at home and ask for at any bar around the world.”
Cocktails are judged on a combination of the inspiration, originality and replicability; as well as visual appeal, aroma and taste. Each entrant is also encouraged to train bartenders to make the cocktail and encourage consumers to replicate their cocktail (the more “replications” the more points) and need to champion a cause. George has partnered with Ark Animal Shelter, to host a fundraising event in February 2020. National winners receive a trophy and a trip to the BACARDÍ® Legacy Cocktail Competition Global Final which will be held in Miami, U.S.A.

30ml Lime Juice
15ml Maple Syrup
10ml Creme de Cassis
- Shake all the ingredients together in a shaker and then strain into a cocktail glass.
