Chef Tyler Clayton has been appointed as the new Head Chef of Marble, moving across from Saint where he held the position of Sous Chef. He takes over from Mike van Rooyen, who left the restaurant to pursue interests overseas.

“We have always believed in promoting from within – the team needs to be rewarded for good work, loyalty and initiative,” says Chef David Higgs. “I can think of no one better than Tyler to fill the massive shoes that Mike has left. Mike was also a good mentor for him, so Tyler really does understand the position. We all wish him well.”

Tyler was first introduced to Chef David Higgs by Chef Paul Hartmann, owner of the SA Chefs Academy where he trained. In 2017, he joined the Marble team as a Chef de Partie, moving over to Saint as part of the opening team. His return to Marble allows him to continue to showcase his sincere love of food.

“I love working with the people at Marble because I get to work with such a diverse group – everyone comes from different walks of life,” Tyler explains. “To be able to work in the open kitchen and interact with the guests is something truly special and, of course, being able to work under the guidance of Chef David Higgs.”

“This industry challenges me and allows me to put all my energy into something – I don’t believe any other job would bring me the instant joy that seeing the reaction on someone’s face when I cook for them,” Tyler Clayton adds.
