A twist on a favourite braai side that’s packed full of healthy vegetables and beautifully bound with Nola Reduced Oil Salad Dressing – and there’s a sprinkle of bacon inside to tempt even die-hard broccoli haters.

Broccauli Bacon Salad

Recipe yield: 1 x main course
Equipment: Oven
Cooking temperature: 180°C
Preparation time: 15 minutes
Cooking/setting time: 10 minutes

Ingredients:

Salad Mix

75g broccoli cut into small florets
75g cauliflower cut into small florets
25g red pepper cut julienne
30g cubed red onion
30g carrots, peeled & diced
40g cooked corn
3 slices bacon (optional), cooked in the oven for
10 minutes or until crispy
3 leaves butter lettuce

Lemon, Black Pepper & Honey Dressing

250ml NOLA Reduced Oil Salad Dressing
Zest & juice of one lemon
¼ tsp crushed black pepper
15g honey

Method:

Place all salad ingredients in a mixing bowl, except the bacon & butter lettuce.

In a separate bowl mix all dressing ingredients together. Add desired amount of dressing to the salad & mix well. Place butter lettuce on a plate then add the salad mix. Top with crispy bacon if desired.

Chef’s Tips:

  • Add chilli for more spice
  • Add chickpeas & toasted seeds
  • Substitute bacon with chicken pieces
  • Replace NOLA Reduced Oil Salad Dressing with NOLA Ultra Creamy for a richer, creamier dressing
