Ingredients:
  • 24 peeled, pitted litchis
  • 1 cup crème fraiche
  • 1 cup Greek yoghurt
  • 8 mini meringues
  • 2 granadillas to garnish.

Method:
  1. Whisk the crème fraiche and yoghurt together.
  2. Arrange litchis in the bottom of ramekins, top with the yoghurt mixture and sprinkle with crushed meringue and passion fruit pulp.
  3. Serve well chilled with extra meringues.
