It is 2011, the start of a new decade and of new things and, for the first time in the history of the McCain Tribute to Good Taste competition, McCain Foods are giving young chefs the opportunity to show what they are made of with only ONE requirement; it has to be sweet – and orange!
The McCain frozen vegetable range is all about quality, freshness, nutrition, convenience and colour. This year the colour is orange, and McCain Foods are challenging chefs to create a starter, main course and dessert recipe for six people, with each dish incorporating the bright orange McCain Alternatives Sweet Potato range.
Specially grown in South Africa, and available in straight and crinkle cut chips or chunks, the McCain Alternatives Sweet Potato is bright orange in colour and can be ideally incorporated onto menus as snacks, for use in vegetarian starters or main courses, or as a main meal accompaniment. The chunks can be used in soups, casseroles, puddings, baked goods, or as a substitute for white potatoes in favourite recipes. With the orange colour adding more appetizing appeal to any dish, the possibilities are endless!
That’s it. No other requirements, conditions or stipulations – any protein or McCain Classics vegetable products can be used, as long the as the bright orange McCain Alternatives Sweet Potato Chips or Chunks is featured.

The McCain Tribute to Good Taste will this year be held at Hostex in Johannesburg, taking place at the Sandton Convention Centre from 13 to 16 March 2011. Four finalists will compete on 15 March 2011for the grand prize of R7 500 plus a floating trophy and guaranteed publicity. Entries close 17 February so enter now.
Last year’s winner was Stacey Lee Chan of the Food Design Agency in Johannesburg, whose winning menu featured a first course of confit butternut tortellini with a sage-infused foam accompanied by roasted butternut custard with a toasted sweetcorn and Madeira soaked sultana salad, and a second course of risotto-styled barley infused with green pea and truffle oil served with a warm vegetable topped garlic croute.
